What is the difference between heirloom, open-pollinated, and hybrid seeds?

Heirloom seeds are open-pollinated varieties that have been grown and saved for at least 50 years — they breed true to type. Open-pollinated seeds are pollinated naturally (wind, insects) and produce offspring similar to the parent — you can save seeds. Hybrid (F1) seeds are crosses between two parent lines for specific traits (yield, disease resistance) — offspring do not breed true, so seeds cannot be reliably saved.
